Whippets are often referred to as a perfect, all-purpose breed: they are gentle, undemanding, friendly towards strangers, and social. They’re also known for being zippy and elegant.

Named in honour of this remarkable breed and its characteristics, our Whippet Sauvignon Blanc displays all the trademarks of a cool climate, Adelaide Hills Sauvignon Blanc. It’s zippy and elegant, light in colour and packed with the heady springtime aromas of freshly cut grass, passionfruit and honeysuckle.

Refreshing natural acidity gives the wine its focus and length with a bracing palate of citrus and nettles that lingers long. May make you bark or howl.

The ‘Whippet’ Sauvignon Blanc displays aromas of guava, mangosteen, leafy herbs, honeysuckle, and lemon. The palate displays refreshing, green bean and nettle characters and finishes with incredible mouth-watering acidity.

Spring rainfall was below average which helped disease control and provided dry conditions for the flowering period. This dry spell lingered through summer and with the expert water usage, helped us control vine vigour resulting in balanced canopies. From veraison through to harvest, the weather was very warm and dry, yet cool nights resulted in exceptional acid retention to balance fruit flavour development. Sauvignon Blanc was harvested between in late February, during the coolest part of the day and delivered to the winery immediately to preserve flavour.

Four blocks located at the highest altitude at Longview were used for ‘Whippet’ Sauvignon Blanc 2019. All blocks were planted on own roots in 1997 and 1998 and pruned differently to allow us a wide array of blending options. The Sauvignon Blanc vines are shoot-thinned early, followed by bunch thinning at veraison to ensure yields are managed and fruit flavour development starts early. We aim to maintain a healthy canopy to retain acid and preserve true Sauvignon Blanc flavours. The fruit was harvested, chilled to 10°C, the juice separated, and skins pressed. Bentonite fining and coarse earth filtering ensures a clear, bright finish.

90 Points – Gary Walsh, Winefront. “They race whippets, as I recall. They are kind of like mini greyhounds. And as Mike Baird likes to say ‘When a problem comes along, you must whippet’. This is quite a light and racy style, as it happens. Subtle capsicum spice, grapefruit, passionfruit and a slight smokiness. Grapefruit and passionfruit, delivers enough flavour without being over-the-top, light chalkiness to the texture and grapefruity acidity to close. Feels a bit coarse on the finish, but stays trim and neat. Good.”

Light and pale to the eye. There are aromatics of white flowers and asparagus in the bouquet. In the mouth the wine is dry and generously fruity. A true fruit cocktail at the tangy end of the fruit spectrum – I tasted hints of kiwifruit, passion fruit, pineapple and lychee. Great as an aperitif or entrée wine.”
