Tasting Notes
Our cabernet has impeccable balance and purity with elegant purple florals and beautifully integrated lightly charred oak. Subtle gravely aromas, a hallmark of the vineyard, sit below strong primary cassis and gentle mint. Fine svelte entry, medium weight, it builds in layers of flavour and waves of ripe tannin. It shows juicy red and dark berry fruits that gather strength, spice and a slice of sweet dark chocolate across the finish.
Winemaking Notes
Our cabernet fruit is sourced entirely from Longview Vineyard at Macclesfield, Adelaide Hills. The fruit was hand-picked to minimise fruit damage, then fermented on skins for 7 days. After maloactic fermentation, the wine was ages in old and new French Oak Barriques.
